New Bagel shop to open in East Cambridge

A graduate of MIT is set to return to Cambridge this upcoming winter, bringing with her the beloved Rhode Island bagel shop she co-owns.

Rebelle, renowned for crafting homemade bagels, spreads, breakfast sandwiches, and delectable pastries in Providence, is expanding to a new location at 249 Third St., situated near Kendall Square in East Cambridge.

Milena Pagán, the owner of Rebelle and a former chemical engineer, embarked on her bagel-making journey by launching a bagel pop-up in early 2016. Just eight months later, Rebelle found a permanent home in Providence’s East Side.

The forthcoming establishment will feature a comprehensive espresso bar and a selection of pastries, including the Halvah & Chocolate Cookie adorned with toasted sesame seeds, as well as flaky “pop-tarts” available in flavors such as strawberry and brown sugar cinnamon. Seasonal variations, like raspberry lime rickey and pumpkin pie, will also grace the menu. This diverse range of sweet treats positions Rebelle as either a complement to or a contender with Tatte Bakery & Cafe, which happens to be just three blocks away on Third Street.

One notable benefit of the new eatery is its ability to address the local shortage of fresh bagel options in the neighborhood. While Inman Square’s Brooklyn Bagel Factory is the nearest alternative, it’s not particularly close, and Harvard Square’s Black Sheep and Porter Square’s Bagelsaurus are even farther away by comparison. As of right now, an opening date has yet to be confirmed.
